Vodka Lime Jelly with Baileys Custard

A day over; but this dessert will last you much longer for all the right reasons. I Introduce to you the Booz-ified Vodka Lime Jelly and Bailey's Crème Caramel Custard. Mr. Stéphane from Very Good Recipes has given me the opportunity to participate as a judge again this month for his monthly recipe challenges. The theme: Greeeeen! super simple! Get cooking and get going; you have until the end of this month to embrace the color and paint your thinking caps green. (For more info hop on over to http://verygoodrecipes.com/saint-patrick-challenge) As a participating Judge I had to set an example; I knew I wanted to do something boozy... I mean how can you NOT celebrate St. Patrick's day without booze. So I came up with this dessert idea, has immense taste, sweet enough to seduce your sweet tooth and textured enough to tease your tastebuds, demanding for more. It requires 3 steps: First make the Vodka-Lime Jelly; I used vanilla flavored vodka to lessen the intensity of the vodka and what do you know, it compliments the jelly in style! The second step is to do the creme caramel custard except use Bailey's instead of your portion of milk. And last but not the least, make a cookie crumble and TADAA! combine, layer or just plop together into a bowl, no one will judge you I assure; all they will be saying is "Do you have anymore left". The boyfriend gave it a 2 thumbs up, try this and tell me what you think; the result was a fantastic texture combination of crunch, slippery jelly and smooth custard.
